- 1 kg of strawberries
- 300g of trifle fingers
- 500g strawberries
- 1 orange
- 9 tablespoons caster sugar
- 1 Crystallised Fig optional for decoration
- 1 Tub Mascapone cheese
- 300ml of whipping cream
- Vanilla essence
Wash strawberrys and cut in half. Place into a bowl with 4 tablespoons of sugar and the juice of one orange. Mix thoroughly and set aside.
In a separate bowl beat the mascapone cheese, cream vanilla essence together, mix in the rest of the sugar and beat until stiff.
Line the bottom of a loaf cake tine with greaseproof paper. Drain the strawberries into a separate dish, soak the trifle fingers in the juice and place in a row at the bottom of the cake tin.
Spoon over some of the cream on top, then place some of the sliced
strawberries.
Put some more trifle fingers on top and spoon some more of the cream mixture on top of this, repeat this until you use up the rest of these ingredients.
Place in a fridge and cool for approx 3 hours.
Turn this out onto a plate and remove grease proof paper and decorate with some strawberries and optional crystallised fig.
